Order of the pancake

These cheesy pancakes went down well for breakfast in our camp at Raglan and a 2nd batch made a tasty lunch for the garden party (as can be attested by the people receiving them as tokens for the order of the pancake). The token is to be worn on your hat (or eaten).

Recipe significantly less redacted as I didn’t have a scale or measuring devices on hand, based on a recipe in the Guedelon cookbook:

  • flour (wheat of some kind)
  • white wine
  • eggs
  • grated cheese (I used cheddar, because that’s easy to find, will probably work well with other more period cheeses too)

Make a batter of the flour, wine & cheese, slightly thicker than a crepe batter (but as long as the ingredients attach to each other there’s no real requirements as to thickness). Add cheese. Fry like a pancake. Serve with honey.

For more novice cooks, take the flour and add wine in small quantities till you have a smooth liquid  mix of flour and wine. Add your eggs, one at a time, more eggs will make your pancake taste eggy, but you need at least some eggs to make sure the ingredients stick together when you bake them. Whisk through the grated cheese.
